Gather equipment and ingredients
Line a cupcake tin with 6 - 8 cupcake cases. Preheat your oven to 180 degrees Celsius.
Place your flour into a large bowl
Take away two tablespoons of the flour, and replace it with two tbsp of cornflour.
Add the rest of the dry ingredients (sugar, baking powder, bicarb soda) and whisk well.
In a separate bowl mix the rest of your ingredients to form a wet mixture. Do not worry of the butter separates and does not combine properly.
Make a well in the centre of your dry ingredients, and pour in the wet.
Mix well until thoroughly combined
Evenly spoon into your cupcake cases and bake for 10 - 15 minutes
When they are ready ( a skewer inserted comes out clean ) transfer to a wire cooling rack to cool
I whipped up a quick batch of chocolate buttercream and frosted mine :) they were delicious
